The helpful folks at Indiana State University have a tutorial on how to delete saved passwords in IE 6 & 7.

In IE 6, it’s done through Tools → Internet Options… → Content → Auto Complete… → Clear Passwords.

In IE 7, use Tools → Internet Options → General → Browsing History → Delete… → Delete Passwords…
